Sarah Wescott was raised on a commercial apple orchard outside of Elgin and Plainview, in southeastern Minnesota. From a young age, she gained an appreciation for rural community and agriculture. This guided her studies at Macalester College where she earned a degree in environmental studies, a food systems emphasis, a minor in Latin American studies, and a concentration in food, agriculture, and society. Following graduation, Sarah immersed herself in Spanish through six months of travel in Mexico and Guatemala. Professionally, she has experience across the government, corporate, and nonprofit sectors with the Minnesota Department of Agriculture’s Minnesota Grown Program, Greener Pastures, Honeybear Brands, and her family’s own orchard business, Wescott Orchard.
Two years ago, Sarah and her partner also started a small farm business selling eggs and veggies. In the spring of 2025, she joined LSP’s staff as a soil health organizer. Her areas of focus include network building, event planning, outreach, education, and external communications. When Sarah isn’t working, she spends time on her own 40-acre farm gardening, doing DIY projects, tending to her dogs, chickens, geese, and ducks, and cooking delicious food. Sarah is an avid traveler and enjoys reading, playing video games, and listening to podcasts.
